Spinach Sweet Potato Salad
Ingredients
- 2 medium sweet potatoes
- 1⁄2 cup diced sweet peppers
- 1⁄2 medium red onion, sliced
- 1 tablespoon Driftless Organics Sunflower Oil
- 1 tablespoon smoked paprika
- 5 handfuls spinach
- 2 tablespoons lime juice
- 1 tablespoon honey
- 2 tablespoons olive oil
- 2 garlic cloves, minced
Instructions
- Preheat oven to 350 ̊.
- Peel sweet potato and cut in to 1⁄4” cubes. Toss with 1 tablespoons oil, onion, peppers, and smoked paprika. Roast until tender, 25-30 minutes.
- Whisk together lime juice, honey, garlic, and oil.
- Toss with desired amount of spinach. Top with roasted vegetables.
